Rice again? Five directions for the pot you made too much of.

Leftover rice is the quickest start to dinner because the slow part is done. Cooled and refrigerated rice goes into fried rice in about 15 minutes, or into congee or rice pudding when you have longer. A bag of dry rice opens up black beans and rice or mujadara. Choose by the time you have and what else is in the kitchen.

What can you make with leftover rice?

Five directions, two of them starting from cooked rice and three from the bag in the cupboard. Each line gives the partners and a rough time; they are starting points, not full recipes, so adjust to what you have.

  • Fried rice: cooked rice, eggs, frozen peas, a carrot and soy sauce. About 15 minutes.
  • Black beans and rice: dry rice in one pot, a can of black beans with onion, garlic and cumin in another. About 30 minutes, both pots running at once.
  • Mujadara: rice, brown lentils and onions browned slowly in oil. About an hour, most of it the onions.
  • Congee: rice simmered in broth with ginger until the grains break down. About 90 minutes, mostly unattended.
  • Rice pudding: rice, milk, sugar and vanilla, thickening as it cools. About 45 minutes.

What did PantryPrix suggest for this pantry?

On 12 October 2026 a pantry-only request on a test account, with cooked white rice, eggs, frozen peas, a carrot and a 30-minute time limit, returned Fried Rice with Eggs and Vegetables: four servings, about 10 minutes of preparation and 15 of cooking, with all eight ingredients already in the pantry. The other four dishes on this page come from the recipe sources the What Can I Make With Rice episode explains. None of the five has been kitchen-tested for this page, and every time is an estimate.

Why does fried rice come out soggy?

A crowded pan. More cold rice in the pan means more water to drive off, the temperature drops and the grains steam instead of browning. Break up the clumps, chop the carrot small, cook the egg first and take it out, then give the rice room and listen for the sizzle. If a batch keeps coming out wet, look at moisture and pan space before adding more soy sauce.

How long does cooked rice keep?

Cool it quickly after cooking, ideally within an hour, then refrigerate it in a covered container and use it within a day. Reheat it once, until it is steaming hot all the way through, and do not reheat it again. Rice that sat out all evening is not rescued by frying it. These are planning rules, not a test of whether a particular bowl is safe.

Which rice dinner fits tonight?

With 15 minutes and cooked rice, make fried rice. With half an hour and a can of beans, start the dry rice and the beans together. Mujadara and congee suit an evening when you are home anyway and can leave a pot alone. Rice pudding is dessert, or the answer when the rice is already cooked and the fridge holds milk and little else.

What if you are missing an ingredient?

Swap for something that does the same job. Any frozen vegetable stands in for the peas, any canned bean for the black beans, vegetable broth for chicken broth in the congee, and a pinch of cinnamon for the vanilla in the pudding. The ingredient substitution chart lists 20 common swaps with ratios. A missing garnish can be skipped.
